Fresh cheeses are ideal for those who want to eat health without giving up a nutritious and tasty dish.
There is only the embarrassment of choice: Mozzarella, Robiola, Ricotta, Stracchino... They are all tasty alternatives to traditional aged cheese.
What is a fresh cheese?
As a general rule, fresh cheeses can be immediately recognized by their expiration date that does not exceed 30 days; furthermore, they have a high moisture content, usually higher than 60%, a slightly acid flavor, a milk-white color.
Fresh cheeses are usually not or minimally aged, and got very mild flavor and a soft and smooth texture.
Freh cheese benefits
Milk coagulation is due to rennet and/or acid produced from a bacterial culture or other sources such as lemon juice, that contribute to develop typical flavours, to improve the quality and its probiotic properties which give fresh cheese health benefits.
Although the fat content is very low compared to aged cheese, their calcium content makes them strong allies in the prevention of osteoporosis.
