What is DOP?
DOP is the short form for Denominazione di Origine Protetta (literally “Protected Designation of Origin”). The DOP certification is a guarantee of Europe's food high quality. It is a seal attributed by the European Community (EC) to some special foods whose peculiar characteristics depend essentially or exclusively on the territory in which they are produced. The geographic environment includes both natural factors (climate, environmental characteristics) and human factors (production techniques handed down over time, craftsmanship, savoir-faire) that, combined, allow to obtain an inimitable product outside a given area productive.
For a product to be D.O.P. the stages of production, transformation and processing must take place in a delimited geographical area. Producers of D.O.P. cheeses or other products must adhere to the strict production rules laid down in the production specification. Compliance with these rules is guaranteed by a specific control body. Thanks to the D.O.P. mark the connection between territory and production is indissoluble: if only one characteristic of the place of origin should change, then the final product would not be the same again.
