Taleggio is a DOP Italian soft cheese from Lombardy belonging to the Stracchino cheese family. Its name comes from the valley near Bergamo it hails from.
It has ancient origins, in fact there are XIII th century documents referring to the trade of Taleggio.
It is a fat cheese made from whole cow's milk, with a sweet and buttery taste, with particular spicy notes when aged. It has a slight acidulous vein, and sometimes a truffle aftertaste; its smell is unique.
Taleggio is characterized also by a particular square shape. The rind is thin and ahas a natural rosy color, featuring gray and green molds. The dough is smooth and compact, softer under the rind, more crumbly in the center. The color of the cheese paste ranges from white to straw.
A real Taleggio D.O.P. cheese can be produced and ripened exclusively in Lombardy. The milk used for the production must come from cows reared in the provinces of Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milan, Pavia, Novara, Treviso.
Taleggio is an excellent table cheese, perfect to be served with some fruits, such as apples and pears. Yet, it is a very versatile cheese taht can be used in the kitchen since it blends very easily.
A worthy substitute for Taleggio can be Fontina cheese, yet the peculiarity of this old cheese are unique.
