  • 17.6 oz bread flour
  • 2 cubes of brewer's yeast
  • 1/2 glass warm water
  • a teaspoon sugar
  • 5 eggs
  • 1/2 glass of Extra virgin olive oil
  • a pinch of salt
  • 5.3 oz Parmesan (half diced and half grated)
  • 2.8 oz Gruyere (half diced and half grated)
  • salt and pepper to taste

Easter Day, “Pasqua”in Italian, is a religious festive holiday that celebrates the resurrection of Jesus Christ. During this period you can find traditional processions in every part of Italy, like the Via Crucis (Stations of the Cross) in Good Friday that represents the Passion of Christ. The most famous one is celebrated by the Pope at the Colosseum.

You can eat this bread in every Easter meal: in the Sunday Lunch, in the Easter dinner and, above all, in the Easter Breakfast with salami, ham and boiled eggs.

You can make this recipe either using a dough machine or mixing by hand.

Instructions

  • Dissolve the yeast in half glass of water.
  • If you have a dough kneading machine put the flour in it, add the dissolved yeast, eggs, oil, sugar, salt and pepper.
  • After a few minutes you can add cheese and continue kneading until smooth.
  • If you don't have a dough machine: sieve the flour into a bowl and make a well in the middle. Add all the ingredients and start stiring vigorously with a wood spoon.
  • Continue kneading with your hands, and add the flour if required.
  • Put the dough in a buttered cake pan ring and let it rest for three hours.
  • Bake in preheated oven at 212° F, then slowly turn the temperature up to 302° F.
  • After an hour, check the bread with a toothpick and make sure it is dry.
