Dried porcini mushrooms

  • Cook the paccheri in a large pot with salted boiling water.
  • In the meantime place the mushrooms in a bowl and cover with hot water. Let soak 15 to 30 minutes, until thoroughly soft.
  • Drain the pasta al dente. Be careful not to break the paccheri while cooking or draining them. Let them cool.
  • In a bowl, mix together the Stracchino, the Parmesan, salt and pepper. Put a clove of garlic in a pan with a little oil and cook untile it gets gold.
  • Cut the mushrooms and gently squeeze them. Then sauté the mushrooms in the pan for a few minutes.
  • Remove the garlic and blend the mushrooms with a mixer. Then add them to the ricotta and mix well.
  • Transfer the cream into a sac-à-poche. Then fill the paccheri delicately.
  • Tap the paccheri first in the flour, then in the egg and finally in the breadcrumbs, being careful to also cover the short sides.
  • Then fry them in a pan with oil hot, a couple of minutes per side, until full browning. Serve immediately.
