Pecorino is an Italian hard cheese made with ewe’s milk. It’s mostly produced in Sardinia, where there is a century-old tradition of sheep farming, but there are also other two famous productions: pecorino romano and pecorino toscano.
You can use Pecorino with different aging periods to enrich your cheese board: from the soft and delicate flavor of fresh pecorino cheese, to the aromas of the one with long seasoning.
