Cheddar DOP cheese
Cheddar is a cheese hailing from the county of Somerset, in the UK, where it has been produced for six centuries. Today, the Cheddar cheese from the counties of Dorset, Somerset, Devon and Cornwall is protected by the West Country Farmhouse Cheddar DOP mark.
It is a hard cheese made from cow's milk, semi-cooked and pressed. Very popular throughout the English-speaking world, it is appreciated worldwide.
The Cheddar rind is natural, of golden or orange. Initially the cheese paste is supple, creamy and smooth, but it becomes more severe way with the passing of time. With ripening, also the color changes from the original white to golden-yellow.
The flavor is sweet in young Cheddar and spicy, with nutty and roasting aromas in the aged wheels.
