There are from 350 to 450 different types of French cheese classified into eight categories. If we consider the varieties that each category includes, we can count more than 1000 French cheeses. Many of them are protected by the AOC label (Appellation d'origine contrôlée, which means controlled designation of origin).

Brie  and Camembert are definitely the most popular ones, but there are many less known amazing French cheeses like Brillat Savarin, Epois, Langres Champenois, Mimolette, Salnnois and many more cheese to discover and to use in amazing cheese platters or recipes.
