Bloomy rind cheeses are those raw milk cheeses that during the processing are treated with special molds. These molds give the crust a typical soft texture and a whitish color from which the name.

The bloomy rind sometimes remembers a flowery meadow and sometimes a layer of frost. Generally bloomy rind cheeses are soft, semi-fat and slightly seasoned cheeses.

Bloomy rind is edible. In particular, the Camembert and Brie rind is a real delicacy!
