Gorgonzola DOP Cheese
Gorgonzola is a fat Italian cheese with soft or semi-soft paste, dipending on the time of ripening. The period of aging also determines the type of Gorgonzola: sweet or spicy.
This blue cheese hails from Lombardy and Piedmont but it is well known all around the world.
Made by cow milk inoculated and with Penicillium Roqueforti, Gorgonzola cheese tends to ripen quickly just for the presence of these molds. During maturation the forms are perforated to facilitate the passage of air that allows mould to further develop.
Blue cheese pair well with dessert and raisin wines.
